(English) Rosé wine & gourmet pasta

After a busy week, my Friday nights are sacredly simple and quite often consist of a quiet dinner with my best girlfriend. Last Friday was one of those nights and although our supper was simple, the result was so comfortingly good that I thought I’d share it with you. If you’re having “diner’s block”, then this is a no-fail combo to try.

Instead of slaving over my own pasta sauce, I happened to spot a butternut squash pasta sauce at Cartet while there for a meeting. Gourmet in a jar – all I had to do was boil some pasta and add the sauce – perfect! I didn’t want to stress over making dinner. I already had the pasta, some arugula and a bottle of rosé chilling in the fridge. To make my salad, (the only thing that really took any effort) I do the following: toast some nuts in a bit of olive oil in a pan – let them cool, toss with the arugula, more olive oil and balsamic vinegar, salt & pepper – garnish with little chunks or shavings of aged cheddar. Paired with bow tie pasta in the butternut squash sauce (which is pleasantly spicy and sweet) and a crisp rosé – it was one of the nicest meals I had in awhile. I’m sure the company had something to do with it, too!
