BOUS Montreal: a NEW Persian Restaurant Redefining Elegant Cuisine

An exciting addition to Montreal’s fine-dining scene, BOUS has arrived with the kind of quiet confidence only a restaurant that knows exactly what it’s doing can pull off. Fresh from its soft launch, the space already feels poised to become one of the city’s most compelling new openings — a modern Persian restaurant that respects tradition while presenting it with contemporary finesse.

Located in the historic former Holt Renfrew building on Sherbrooke, BOUS’s design sets the tone immediately: warm woods, soft lighting, and a minimalist aesthetic that lets the food take center stage. The atmosphere strikes that rare balance between elevated dining and genuine comfort, making it ideal for long, lingering meals.

A Menu Rooted in Heritage, Executed with Precision

The kitchen leans into the depth and complexity of Persian cuisine, offering dishes that highlight aromatics, slow cooking, and the interplay of sweet and savoury. Among the standouts from the media dinner I attended were the rich, homemade yogurt-based starters and sides, bright with fresh herbs and citrus, and the kebab selections, each grilled with impressive flavours and served with a side of sumac, allowing the diner to add a personal touch of the tangy spice.

But the dish that truly captured the room — and my personal favourite — was the Fesenjoon. Traditionally a comforting stew of pomegranate and walnut, BOUS elevates it into something extraordinary. Here, it’s paired with a tender duck leg confit, the richness of the meat playing against the stew’s deep, tangy sweetness. It’s the kind of plate that stops conversation for a moment, demanding ones full attention.

A Refined Finish

Dessert continues the theme of creative reinterpretation of Persian classic favourites. We were presented with Fāloodeh, a refreshing sorbet made with Iranian berries, rose water and rice noodles which appeared like a jewel-toned finale to our meal — tart, floral, subtly sweet and slightly crunchy — it’s a dish that feels both nostalgic and new, a perfect expression of BOUS’s culinary philosophy.

Montreal has no shortage of excellent restaurants, but BOUS fills a gap: a Persian dining experience that is both rooted and reimagined.
